For this recipe, we’ve used King Island Brie and kept the toppings sweet: strawberries cooked with maple syrup until soft and jammy, a little balsamic for depth, roasted pistachios for crunch, and fresh basil to finish.
It’s sweet, creamy, bright, and a little unexpected. The kind of thing you can put in the middle of the table and let everyone gather around.

Ingredients
- 1 small wheel King Island Brie
- 1.5 cups strawberries, quartered
- 2.5 tablespoons maple syrup
- 1 teaspoon balsamic glaze
- 3–4 tablespoons roasted pistachios, crushed
- Fresh basil, finely sliced
- Crackers or warm bread, to serve
Method
- Preheat oven to 190°C.
- Place the King Island Brie in a small oven-safe dish or brie baker and score the top in a criss-cross pattern.
- Bake for 10–12 minutes, or until soft and molten in the centre.
- While the brie bakes, add the strawberries and maple syrup to a pan over low-medium heat.
- Cook until the strawberries soften and turn jammy.
- Stir through the balsamic glaze right at the end.
- Spoon the warm strawberries over the baked brie.
- Finish with crushed pistachios and fresh basil.
- Serve straight away with crackers or warm bread.
Tip
Keep an eye on the brie while it bakes. You want it soft and spoonable in the centre, but still holding its shape.
