Half Moon Bay Double Brie is made from rich high butterfat content milk into a 1kg round with creamy centre.
It has a velvety, dense white rind with a beautiful glossy, creamy yellow centre. The younger cheese has a scent of fresh mushrooms which progresses to a more straw like aroma as it ripens.
”Half Moon Bay” is a curving 200 m wide southwest-facing rock-bound bay, located immediately north of British Admiral Beach on King Island.
